General summary
Manages and leads a culinary team in a dining facility to ensure high quality culinary performance. Assists with menu and recipe development, service implementation and training.
Major duties
- Manages and oversees all culinary operations for a dining facility to ensure quality standards are met, including proper production methods and amounts, sanitation and food presentation. Assists in the development and execution of a quality culinary program throughout board and retail operations.
- Ensures strict compliance with all health, safety and sanitation requirements and regulations. Plans and provides appropriate services during emergency or special situations.
- Sets a model for high quality standards for culinary professionalism. Remains current with food trends, cuisines and progressive cooking and serving methods.
- Utilizes the menu management system to create menus and recipes. Analyzes historical data to forecast and order needed products, manage receiving processes, control inventory and establish production schedules within strict time constraints to ensure quality services within budgetary guidelines.
- Supervises staff in compliance with the labor contract. Conducts culinary training and demonstrations. Writes requirements and ensures standards are properly communicated. Ensures employee compliance with proper customer service, policies and procedures.
Minimum qualifications
Minimum qualifications based upon job documentation and industry best practices. Any current employees not meeting these qualifications will be grandfathered until they move to a different job.
Required education
- Associate's degree in Culinary Arts from an accredited institution.
Required experience
- Supervisory experience in a large commercial dining operation.
- Strong interpersonal, written and verbal communication skills.
- Strong organizational and logistical skills.
- Ability to work effectively and collaboratively with a diverse team.
Required other
- ServSafe certified or equivalent or able to obtain within 90 days of hire.
- Ability to work irregular shifts and extended hours, including weekends and holidays.
Physical requirements
Office or other indoor work with minimal physical demands such as occasionally lifting or moving materials less than 25 pounds.
Working conditions
Work is generally performed in a well-lit, temperature-controlled indoor environment with occasional exposure to the outdoors or any number of elements.
